Chocolate has a remarkable way of transforming an ordinary afternoon into something worth celebrating.

Whether it’s a birthday, a family gathering or simply a quiet evening with a cup of coffee, homemade brownies are one of life’s simplest pleasures.

Our fudgy dark chocolate and pecan brownies combine rich chocolate, crunchy nuts and a subtle hint of cinnamon.

For those who enjoy something adventurous, a little chilli dark chocolate adds an unexpected warmth to every bite.

Ingredients

  • 150 g Chilli Is A Spice Dark Chocolate
  • 50 g Chilli Dark Chocolate (or additional Dark Chocolate)
  • 115 g Coconut Oil
  • 150 g brown sugar
  • 3 large eggs
  • 95 g all-purpose flour
  • 80 g Pecan Halves, roughly chopped
  • ¼ teaspoon Cinnamon
  • 1 teaspoon vanilla extract (optional)
  • A pinch of salt

Method

Step 1: Prepare the oven

Preheat your oven to 180°C.

Line a 20 cm square baking tin with baking paper, leaving a little overhang for easy removal.

Step 2: Melt the chocolate

Place the dark chocolate, chilli dark chocolate and coconut oil in a heatproof bowl.

Set the bowl over a saucepan containing gently simmering water, ensuring the bottom of the bowl does not touch the water.

Stir occasionally until smooth, then remove from the heat and allow to cool slightly.

Step 3: Mix the eggs and sugar

In a separate bowl, whisk the eggs and brown sugar until well combined and slightly lighter in colour.

Add the vanilla extract, if using.

Step 4: Combine everything

Gradually stir the melted chocolate into the egg mixture.

Add the flour, cinnamon and salt, folding gently until no dry flour remains.

Stir in most of the chopped pecans, reserving a few for the topping.

Step 5: Bake

Pour the batter into your prepared baking tin.

Scatter the remaining pecans over the surface.

Bake for 22–28 minutes, until the edges are set and a toothpick inserted near the centre comes out with moist crumbs rather than liquid batter.

Allow the brownies to cool before slicing.

The Secret to Really Good Brownies

There are three ingredients that make this recipe particularly satisfying.

Dark chocolate gives brownies their rich, intense flavour.

Pecan halves introduce a buttery crunch that contrasts beautifully with the soft centre.

Cinnamon adds subtle warmth without competing with the chocolate.

And if you’re using chilli dark chocolate, you’ll discover how a little heat can make rich chocolate taste even more interesting.
