The secret? A combination of herbs and spices that transforms everyday chicken into something extraordinary.

Ingredients

  • 4 bone-in chicken thighs
  • 600 g potatoes, cut into wedges
  • 2 bell peppers, sliced
  • 1 large onion, cut into wedges
  • 200 g mushrooms
  • 2 tablespoons Chilli Is A Spice Avocado Oil
  • 2 teaspoons Smoked Paprika
  • 1 teaspoon dried Rosemary
  • 1 teaspoon Garlic Powder
  • ½ teaspoon freshly ground Black Pepper
  • ¼ teaspoon Cayenne Pepper (optional)
  • Salt to taste
  • Lemon wedges for serving (optional)

Shopping tip: Many of the vegetables can be sourced from our Braai & Sides Box, while the herbs, spices and oil are available separately.

Method

Step 1: Prepare your vegetables

Preheat your oven to 200°C.

Wash and chop the potatoes, peppers, onion and mushrooms. Place the potatoes and onion in a large roasting dish.

Drizzle with approximately half the avocado oil, sprinkle with a little salt and toss until evenly coated.

Roast for 20 minutes to give the potatoes a head start.

Step 2: Create the spice blend

In a small bowl, combine the smoked paprika, rosemary, garlic powder, black pepper, cayenne pepper and salt.

Add the remaining avocado oil and mix into a paste.

Step 3: Season the chicken

Pat the chicken dry with paper towel.

Rub the spice mixture evenly over each piece, ensuring the chicken is well coated.

Step 4: Roast everything together

Remove the roasting dish from the oven.

Add the peppers and mushrooms, then arrange the seasoned chicken over the vegetables.

Return to the oven for approximately 30–40 minutes, until the chicken reaches an internal temperature of 74°C and the potatoes are tender.

Step 5: Serve and enjoy

Allow the chicken to rest briefly before serving.

Finish with a squeeze of lemon for freshness, if desired.

Why These Spices Work So Well

Smoked paprika adds rich colour and an unmistakable smoky flavour without requiring a braai.

Rosemary brings a fragrant, slightly woody character that pairs beautifully with roasted meat and potatoes.

Garlic powder distributes savoury flavour throughout the dish, while cayenne pepper provides an optional fiery finish.

Together, these ingredients create layers of flavour with very little effort.

Make It Your Own

Prefer cooking outdoors? Prepare the seasoned chicken on the braai and roast the vegetables separately.

For a spicier version, add extra cayenne or Chilli Flakes. For a Mediterranean variation, introduce a little Oregano and Thyme.
